Strawberry and Lemon Muffin

My growing 2 years old toddler liked to have snacks in between her meal time, normally i gave her Biscuits, Fresh Fruit or Finger Foods.

Trying not to narrow the range of foods to my toddlers, I tried to offer her strawberry I bought from Jusco supermarket the other day (never tried to gave strawberry to her before) and guess what? she refused to taste it...  

I don't have any clues what to do with that strawberry... It is not good to force feeding her so, either I let it dried out in the fridge or gave it to 'Mr Bin'..

So, I google-ing things and I found Karen Cheng blogging about Strawberry and Lemon muffin.. Coincidentally I have leftover lemon as my husband like to drink lemon tea almost everyday...

This is how I baked it step by step:


First step: Separating the mixture of dry and wet ingredient

muffin

Then: Put in the strawberry in the mixture before spoon it into the muffin pan


Lastly: Baked it in the oven for 25 to 30 minutes, and because of 'not so delicious looked' i decided to drizzle icing sugar on the top of the muffins as a finishing...

Zara ate it a lot without knowing inside there was the strawberry she refused to eat it on the first place.. keh keh
